Classic Hummus

Ingredients
- 1 can (400g) chickpeas, drained and rinsed
- 3 tablespoons tahini
- 2 tablespoons lemon juice
- 1 clove garlic, minced
- 2 tablespoons olive oil
- Salt to taste
- Pinch of cumin
- Water as needed
Steps
- Add chickpeas, tahini, lemon juice, and garlic to a food processor
- Blend until smooth, scraping down sides as needed
- Drizzle in olive oil while blending
- Add water a tablespoon at a time until you reach desired consistency
- Season with salt and cumin
- Serve with a drizzle of olive oil and a sprinkle of paprika

The secret to ultra-smooth hummus is blending longer than you think you need to. A full 3-4 minutes in the food processor makes a real difference. Some people remove the chickpea skins for extra smoothness — worth trying once.
